I am craving congee today and usually this is what I make. I know it's not the whole truth but a version of it but it works for me:-) I cook short grained aromatic rice with chopped up chicken, stock, galangal, cilantro stalks, salt and white pepper for at least a couple of hours. When it turns into a mush, I add chopped up oyster mushroom, scallop ( occasionally), dash of chili sauce and sesame oil.
